My girlfriend is a Canadian citizen, and she’d like to look into some nursing schools stateside here in the US. Does she need the Visa first? Does she need an acceptance letter from the school first? Where can she go to find more info?

A visa is a travel document affixed or stamped on a page of a passport. Canadian citizens are exempt the visa requirement for all nonimmigrant classification except K, E, and V. A nonimmigrant student is in the F-1 classification.
However, a Canadian citizen has to meet all the other requirements for admission as an F-1, the main one being a SEVIS I-20 form. Your g/f needs to find a nursing school that is authorized to issued I-20 forms. If she’s accepted at such a school, they will give her an I-20 which she would need to present at the time of her entry into the country so that she can be issued an I-94.
The I-94 form would be her form of alien registration showing admission as an F-1 student for the time period needed to complete her education. The officer at the school who issues the I-20 forms can provide her with more information.

I accidentally gave one of the answers a low rating. Bit heally he is right. You just have to finda school that accepts international students and get accepted. However, she will have to prove she has access to sufficient funds each year, about $20,000 per year.
But really, when you get down to it, Canadian nursing schools are just as good and the credentials they issue are accepted in the US. She would be just as far ahead to go to a Canadian school and move to the US on a TN visa when she graduates. And it will be a lot cheaper.
It cost $90,000 to put my Canadian daughter through her undergrad degree in the US. And she is in grad school now.
