The best university in Texas is Rice University. University of Texas at Austin is the second best.
To find a good fit, I suggest you look at Princeton Review. They have a tool where you can enter information about your background and interests. It will then suggest good schools for you.

You've probably heard this over and over, but definitely check out University of Texas at Austin. It's a huge school, but that only adds to it. Austin is a fun, interesting city with stuff to do for anyone that loves music, good food, and culture in general. I went to visit (I'm a senior too) this past summer in this colloquiam thing, and I'm definitely considering the place from what I saw and heard. UT has great programs in all those fields and even more, because such a large university has a lot of resources. If I end up staying in Texas too, it would be the only place I'd go to.

UT and SMU are great schools and will offer you a wide range of topics to choose from. I would say check out Yollege. It will give you the perspectives of students, and that will allow you to better understand which school would be best for you. http://www.yollege.com
